Among the different types of pistachios, roller pistachios are the most effective for separating pistachios that have not been peeled for any reason (immaturity, dryness, etc.), while they do not cause mechanical damage to the product. The use of these devices after dehumidification has a higher efficiency. Separation of unpeeled pistachios before dehumidification is effective in the operation of the dehumidifier and prevents pistachios suspected to be contaminated with aflatoxin from coming into contact with healthy pistachios. Therefore, it is better to use dehumidifiers both before and after dehumidification.

The percentage of moisture reduction of pistachios depends on the length of moisture absorption and the speed of transfer of pistachios. In cases where the volume of work allows, the duration of water absorption can be increased by closing the outlet of the dehumidifier in order to reduce more of its humidity. Dehumidifiers increase the efficiency of dryers and better use of heat energy by evaporating surface water from pistachio washing. It should be noted that the repellent alone is not able to provide the necessary protection in terms of fungal growth, and drying with hot air to reach a humidity of 4 to 6% is necessary before doing any other work.
